Banana Walnut Cake



Oil – 1/2 cup

Sugar – 1/2 cup

Eggs – 2

Ripe bananas – 2 mashed well

Walnuts – 1/2 cup chopped

Vanilla essence – 1 tsp

Milk – 1/4 cup

Dry Ingredients

All purpose flour / Maida – 1 cup

Whole wheat flour / Atta – 1/2 cup

Baking powder – 1 tsp

Baking soda – 1/2 tsp

Salt – 1/4 tsp



Mix all the dry ingredients and keep aside.  Blend the oil and sugar for a minute and add the eggs.  Beat well till frothy and then add the mashed bananas and walnuts.  Mix well and fold in the flour mixture in small portions. Add the essence and milk, and fold in.  Pour into a greased baking tray and bake in a preheated oven on 350 F for 25 minutes or until a skewer inserted in the middle comes out clean.  Leave the cake in the oven for 10 minutes and then cool on a wire rack before serving.  Enjoy delicious, healthy and nutritious ‘Banana Walnut Cake’ with your kids!
