Spicy Chicken Noodles



Egg Noodles – 200 gm

Water – 8 litres

Salt – 1/2 tsp

Oil – 2 tsp

Eggs – 2 beaten

Oil – 2 tbsp

Ginger – 1/2 tsp crushed

Garlic – 1 tsp crushed

Onion – 1 medium sliced

Carrot – 1 julienne

Green beans – 4 thinly sliced

Green capsicum – 1/2 julienne

Green chillies – 2 sliced

Boneless chicken – 1/2 cup thin strips

Red chilly paste – 1 tsp

Oyster sauce – 1 tbsp

Soy sauce – 1 1/2 tbsp

Maggi chicken cube – 1 small crushed

Pepper powder – 1/4 tsp

Sugar – 1/4 tsp

Salt – to taste

Aginomotto – 1/8 tsp



Cook the egg noodles with salt in water, according to the instruction given on the packet.  Drain through a sieve and wash in cold water.  Heat 2 tsp of oil in a large non-stick pan / wok and make two thin omelettes.  Slice them into strips.  Heat 2 tbsp of oil in the same pan and add ginger and garlic followed by the onions and vegetables.  Saute’ for 2 minutes and add the chicken pieces.  Then add the cooked noodles, sauces, crushed Maggi cube, pepper powder, sugar, salt, aginomotto and the strips of omlette.  Stir-fry for a minute on high flame.  Mouth-watering ‘Spicy Chicken Noodles’ is now ready!  Serve it with any side dish of your choice and enjoy with your loved ones.
