Fried Rice Noodles / Fried Mee Hoon


Ingredients

Rice Noodles – 400 gm

Warm water – 6 litres

Oil – 2 tsp + 3 tbsp

Eggs – 2

Prawns – 100 gm

Garlic – 6 small crushed

Onion – 1 sliced

Carrots – 2 julienne

Beans – 1 cup julienne

Bird’s eye chillies – 4 sliced (optional)

Maggi chicken cubes – 2 crushed

Water – 1/2 cup

Soy sauce – 4 tbsp

Oyster sauce – 4 tbsp

Pepper powder – 1/2 tsp

Sugar – 1 tsp

Salt – to taste


Method

Soak the noodles in warm water for 10 minutes, drain and keep aside.  Heat 2 tsp of oil in a large non-stick wok and scramble the eggs, keep aside.  Heat 3 tbsp of oil and add garlic.  Fry for a few seconds and add the vegetables and prawns.  Add salt and stir-fry for 5 minutes.  Add chicken cubes, water, sauces, pepper powder and sugar.  Mix well and add the noodles.  Stir-fry till the noodles is well coated with the sauces.  Delicious ‘Fried  Rice Noodles / Fried Mee Hoon’ is ready to be served.  Enjoy with your kids!
