Ingredients
Chicken – 500 gm cut into small pieces
Ginger-garlic paste – 1 tbsp
Coriander powder – 1 1/2 tsp
Turmeric powder – 1/2 tsp
Chilly powder – 3/4 tsp
Pepper powder – 1/2 tsp
Thick coconut milk – 2 tbsp
Salt – to taste
For Stir Frying
Oil – 1 1/2 tbsp
Onion – 1 big sliced
Curry leaves – 1 sprig
Potato – 1 big diced
Chicken masala – 1 1/2 tsp
Chilly powder – 3/4 tsp
Garam masala – 1/2 tsp
Aniseed powder / Perumjeeraka podi – 1/4 tsp
Tomato paste – 2 tbsp
Maggie chicken cube – 1 small powdered
Water – 1/2 cup
Salt – to taste
Method
Marinate the chicken pieces with the spice powders, ginger-garlic paste, thick cooconut milk and salt for 30 minutes. Heat oil in a non-stick pan and fry onions and curry leaves till light brown. Add the marinated chicken pieces and potatoes. Also add the spice powders and tomato paste. Stir fry till oil separates. Add maggie cube, water and salt. Cook covered on a low flame till the chicken is done. Simmer till the gravy is well coated on the chicken and potatoes, and the oil separates. Delicious ‘Chicken and Potato Stir Fry’ is now ready. Serve it with rice, chapathi, porotta or bread. Enjoy!
