Ingredients
Chicken – 1/2 kg cut into pieces
Coriander powder – 1 1/2 tsp
Chilly powder – 1 tsp
Turmeric powder – 1/2 tsp
Water – 1/2 cup
Salt – to taste
For Frying
Oil – 2 tbsp
Garlic – 2 tsp crushed
Ginger – 2 tsp crushed
Onions – 3 medium sliced
Green chillies – 2 slit
Curry leaves – 2 sprigs
Coconut pieces – 1/2 cup
Chicken masala – 1 1/2 tsp
Cumin powder – 1/2 tsp
Garam masala – 1/2 tsp
Pepper powder – 1 tsp
Tomatoes – 2 diced
Coriander leaves – 1 tbsp chopped
Method
Cook the chicken pieces along with the spice powders, water and salt. Heat oil in a non-stick pan and add garlic and ginger followed by onions, green chillies, curry leaves and coconut pieces. Fry till the onions turn golden brown. Add the spice powders and spinkle some water. Fry till the aroma comes out. Add the tomatoes and fry well. Now add the cooked chicken and stir-fry till the chicken turns dark brown in color. Garnish with coriander leaves. Lip-smacking ‘Chicken Stir Fry / Kozhi Ularthiyathu’ is now ready! It is a good side dish for rice, pulao, appam, idiyappam, chapathi, porotta and bread. Enjoy with your loved ones!
