Egg Fried Rice

Ingredients

Thai Jasmine Rice / Jeera Rice – 2 cups

Water – 1 1/2 cups

Eggs – 4

Oil – 3 tbsp

Garlic – 3 small crushed

Onion – 1 big chopped

Carrots – 1/2 cup diced

Beans – 1/2 cup diced

Cabbage – 1 cup shredded

Celery – 2 tbsp chopped

Maggi chicken / veg cubes – 2 small crushed

Water – 1/4 cup

Soy sauce – 2 tbsp

Pepper powder – 1/2 tsp

Sugar – 1/4 tsp

Salt – to taste

Aginomotto / MSG – 1/4 tsp

Spring onions – 2 tbsp chopped

Method

Put the rice and water into a rice cooker and cook till done.  Allow it to cool.  Heat oil in a large non-stick wok and add garlic followed by onions, carrots and beans.  When the onions turn pink, add the cabbage and celery.  Add the beaten eggs and fry.  Break  the lumps of the rice and add to the veggies.   Also add maggi cubes mixed with water, soy sauce, pepper powder, sugar, salt and aginomotto.  Fry the rice on a high flame till all the vegetables get well mixed with the rice.  Finally add the spring onions.  Mix well and switch off the flame.  Yummy ‘Egg Fried Rice’ is now ready.  Enjoy it with any Chinese side dish of your choice!
