Ingredients
Thai Jasmine Rice / Jeera Rice – 3 cups
Water – 4 1/2 cups
Oil – 3 tbsp
Garlic – 3 big chopped finely
Onions – 2 medium chopped
Carrots – 2 chopped
Cabbage – 1 1/2 cups shredded
Spring onions – 1 cup chopped
Eggs – 2
Prawns – 150 gm
Cooked chicken – 1 cup shredded
Chicken stock – 1 cup
Maggie chicken cube – 1 crushed
Szechuan sauce – 3 tbsp (store-bought)
Soy sauce – 3 tbsp
Pepper powder – 1/2 tsp
Sugar – 1 tsp
Salt – to taste
Method
Cook the rice along with the water in a rice cooker till done. Let it cool. Heat oil in a large non-stick wok and add garlic followed by the onions and carrots. Add the cabbage and prawns and fry for 2 minutes. Keep the veggies to one side and scramble the eggs. Add the cooked chicken and mix them all together. Add the cooked rice, spring onions, chicken stock, maggie cube, sauces, pepper, sugar and salt to taste. Fry on high flame till the sauces are well coated on the rice. Yummy ‘Szechuan Fried Rice’ is ready to be served. Enjoy!
