Chicken Barley Soup



Pearl barley – 1/2 cup

Water – 2 cups

Olive oil – 2 tsp

Onion – 1 medium chopped

Chicken stock – 6 cups

Potatoes – 3 medium diced

Green beans – 1 cup diced

Carrot – 1 diced

Salt – to taste

Cooked chicken – 1 cup shredded

Cauliflower florets – 1 cup

Cabbage – 1  cup shredded

Pepper powder – 1/2 tsp

Dried Parsley – 1/4 tsp

Dried Thyme – 1/4 tsp



Pressure cook barley along with water for 5 minutes on a low flame, after the first whistle.  Heat oil in a stew pot and saute the onions till they become light brown.  Add the chicken stock, potatoes, carrots, beans and salt.  Cook covered on a low flame for 5 minutes.  Now add the cooked barley along with the leftover water, shredded chicken and cauliflower florets.  Cook covered for another 5 minutes.  Finally add the cabbage, pepper powder and the seasonings.  Cook for 2 more minutes .  Healthy and nutritious ‘Chicken Barley Soup’ is now ready to be served.  Enjoy!
