Ingredients
Cooked boneless chicken – 1 cup shredded
Chicken broth – 5 cups
Egg Noodles – 3/4 cup broken
Butter/ Olive oil – 2 tbsp
Ginger – 1 tsp finely chopped
Garlic – 1 tsp finely chopped
Onion – 1 big chopped
Carrot – 1 cup sliced
Celery – 1 tbsp chopped
Bok choy (Chinese cabbage)/ Cabbage – 1 cup shredded
Coriander leaves – 1 tbsp chopped
Pepper powder – 1/2 tsp
Salt – to taste
Method
Heat butter/ oil in a sauce pot and add chopped ginger and garlic. Saute for a few seconds and add onions. When the onions turn pink, add carrots and celery. Saute for 2 minutes and add the chicken broth. When it starts to boil, add the shredded chicken and broken noodles. Add salt to taste and let it simmer till the noodles is cooked. When the noodles is 3/4th done, add the bok choy/ cabbage and pepper powder. Simmer for another 5 minutes more. Garnish with chopped coriander leaves. Serve yummy ‘Chicken Noodle Soup’ with any bread of your choice. Enjoy!
