Ingredients
Sona Masoori / Basmati Rice – 1 1/2 cups
Water – 3 cups
Ghee – 2 tsp
Oil – 1 1/2 tbsp
Bay leaf – 1
Cloves – 4
Mace / Javithri – 1 piece
Star anise – 1
Cinnamon – 2 ” piece
Cardamom – 3
Peppercorns – 1/4 tsp
Onion – 1 big chopped
Green chillies – 4 slit
Ginger-garlic paste – 2 tsp
Tomatoes – 2 chopped
Mint leaves – 1 tbsp chopped
Coriander leaves – 1 tbsp chopped
Frozen vegetables – 2 cups
Maggie veg / chicken cube – 1 big crushed
Salt – to taste
Soya sauce – 2 tsp
Sugar – 1/2 tsp
Agino motto – 1/4 tsp
For Frying
Potatoes – 2
Turmeric powder – 1/4 tsp
Salt – to taste
Oil – for frying
Method
Cook the rice and water in a rice cooker, keep it aside. Heat ghee and oil in a large non-stick pan and add the whole spices followed by onions and green chillies. When the onions turn light brown, add ginger-garlic paste, tomatoes, mint and coriander leaves. Fry for 2 minutes and add the frozen veggies, maggie cube and salt. Fry for 2 minutes more and add the cooked rice without lumps. Add the soya sauce, sugar and agino motto. Fry well till the rice gets mixed with the veggie mixture.Cut the potatoes into wedges and marinate with turmeric powder and salt for 15 minutes. Fry them in oil till golden brown. Garnish the Pulao with potato wedges. Tasty ‘Vegetable Pulao with Soya Sauce’ can be served with any side dish of your choice. Enjoy!
