Carrot Capsicum Subzi



Carrots – 2 diced

Capsicum – 1 diced

Oil – 1 tbsp

Onion – 1 medium sliced

Green chillies – 4 slit

Curry leaves – 1 sprig

Pepper powder – 1/8 tsp

Salt – to taste



Heat oil in a non-stick pan and add onions, green chillies and curry leaves.  Saute’ till the onions turn pink in color.   Add the carrots and salt.  Cook covered on a low flame till half done.  Now add the capsicum and pepper powder, cover with the lid and cook again on a low flame till done.  Stir in between.  Tasty ‘Carrot Capsicum Subzi’ is now ready.  Serve it as a side dish for rice or rotis.  Cheers!
