Ingredients
Cabbage – 1/2 shredded
Carrots – 2 chopped
Grated coconut – 3/4 cup
Onion – 1 sliced
Garlic – 1 chopped
Green chillies – 4 chopped
Curry leaves – 2 sprigs
Mustard seeds – 1 tsp
Cumin seeds/jeera – 1/2 tsp
Turmeric powder – 1/2 tsp
Coconut oil – 1 tbsp
Method
Heat oil in a non-stick pan and splutter mustard seeds and cumin. Add onions, garlic, green chillies and curry leaves. Fry for a minute and add turmeric powder. Stir and add cabbage, carrots and salt. Cover with a lid and cook on a low flame. Do not add water. Stir every 5 minutes while cooking. When 3/4th done, add grated coconut. Mix well and cover and cook till done. Serve with rice or rotis.
