Ingredients
Macaroni – 360 gm
Water- 2 litres
Oil – 1 tsp
Salt – 2 tsp
Venky’s frozen chicken keema – 250 gm
Olive oil – 2 tbsp
Garlic – 1 tbsp
Onion – 1 cup chopped
Chilly flakes — 2 tsp
Italian spice mix – 2 tsp
Pepper powder – 1/2 tsp
Tomatoes – 2 cups chopped
Mushrooms – 1/2 cup sliced
Baby corn – 1//2 cup sliced
Capsicum – 1/2 chopped
Mint leaves – 1/4 cup
Tomato sauce – 4 tbsp
Salt – to taste
Macaroni water – as required
Parmesan / Amul cheese – 2 tbsp grated
Method
Cook the macaroni in boiled water along with oil and salt, for 5 minutes. Drain it and wash in cold running water. Strain and keep aside. Save the water in which the macaroni was cooked. Heat oil in a large non-stick wok and add garlic followed by onions. When the onions turn light brown, add chilly flakes, spice mix and pepper powder. Add tomatoes and saute till oil separates. Add the vegetables and cook covered for 2 minutes. Defrost the chicken keema and add to the pan. Now add enough of the macaroni water, tomato sauce and salt. Add the macaroni and cheese. Mix well till the macaroni is well coated with the mixture. Delicious ‘Chicken Macaroni’ is ready to be served. Enjoy with your kids!
