Ingredients
Hard boiled eggs – 4
Oil – 2 tbsp
Mustard seeds – 1/4 tsp
Onions – 3 sliced
Green chillies- 2 chopped
Curry leaves – 2 sprigs
Ginger-garlic paste – 2 tsp
Tomato – 1 big chopped
Coriander powder – 1 tsp
Kashmiri chilly powder – 1 1/2 tsp
Pepper powder – 1/4 tsp
Turmeric powder – 1/4 tsp
Garam masala – 1/4 tsp
Water – 1/3 cup
Sugar – 1/2 tsp
Salt – to taste
Coriander leaves – 1 tbsp chopped
Method
Heat oil in a non-stick pan and splutter mustard seeds. Add onions, green chillies and curry leaves. When the onions turn light brown, add ginger-garlic paste, followed by tomatoes and salt. Saute till the oil separates. Add the spice powders and sprinkle some water. Saute till oil separates. Add water and sugar, mix well. When it boils, add the hard biled eggs. Cover them with the masala and simmer till the oil separates. Finally add the coriander leaves and mix gently. Serve delicious ‘Egg Roast / Mutta Roast’ with appam, idiyappam, dosa, chapathi or boiled spaghetti. Enjoy!
