Ingredients
Liver – 500 gm, cut into big chunks
Turmeric powder – 3/4 tsp
Water – 1 cup
Oil – 2 tbsp
Onions – 2 medium chopped
Green chilliy – 1 sliced
Curry leaves – 2 sprigs
Ginger-garlic paste – 2 tsp
Coriander powder – 1 1/2 tsp
Meat masala – 1 1/2 tsp
Chilly powder – 1/2 tsp
Pepper powder – 3/4 tsp
Garam masala – 1/2 tsp
Aniseed powder / Perumjeerakapodi – 1/4 tsp
Vinegar – 2 tsp
Salt – to taste
Water – 1/4 cup
Method
Pressure cook the liver chunks along with turmeric powder and water for 20 minutes or till done. (Do not cut them into small pieces or add salt while cooking because the liver pieces will become hard.) Take out the cooked liver and cut them into 2″ pieces. Keep aside the leftover gravy. Heat oil in a non-stick pan and add onions, green chilly and curry leaves. Fry till the onions turn light brown. Add the spice powders and sprinkle some water. Fry till the aroma comes out. Add the liver pieces, the leftover gravy, vinegar, salt and water. Mix well and cook covered on a low flame for 5 minutes. Open the lid and stir fry till the gravy is well coated on the liver pieces. Lip-smacking ‘Liver Varattiyathu / Liver Stir Fry’ is ready! Serve it with rice, chapati, doas, appam, porotta or bread. Enjoy!
