Duck Curry

Ingredients

Country duck – 1 kg cut into pieces

Turmeric powder – 3/4 tsp

Salt – to taste

Oil – 2 tbsp

Cloves – 3

Cinnamon – 2″ piece

Star anise – 2 small pieces

Ginger – 1 tbsp chopped

Garlic – 2 tbsp chopped

Onions – 2 medium sliced

Green chillies – 4 slit

Curry leaves – 4 sprigs

Coriander powder – 2 tsp

Meat masala – 2 tsp

Chilly powder – 2 tsp

Pepper powder – 1 tsp

Garam masala – 1/2 tsp

Aniseed powder/ Perumjeerakapodi – 1/2 tsp

Thin coconut milk – 3/4 cup

Vinegar – 1 tbsp

Thick coconut milk – 3/4 cup

Method

Marinate the duck pieces with salt and turmeric powder for 30 minutes.  Heat oil in a pressure cooker and add the whole spices followed by ginger and garlic.  Fry for few seconds.  Add onions, green chillies and curry leaves.  Fry till the onions turn light brown.  Add the spice powders, sprinkle some water and fry till the aroma comes out.  Add the marinated duck pieces and fry for 5 minutes.  Add thin coconut milk.  Mix well, close the lid and pressure cook for 20-30 minutes on a low flame, after the first whistle.  Allow it to cool.  Open the lid and add vinegar.  Simmer till the gravy is thick.  Add the thick coconut milk and mix well.  Heat it through and switch off before it starts to boil.  Delicious ‘Duck Curry’ goes well with rice, appam, idiyappam, puttu, pathiri, dosa, chapati, porotta and bread.  Enjoy with your loved ones!
