Pork Curry with Coconut Milk


Ingredients

Pork – 500 gm cut into cubes

Tamarind – 1 lime size

Water – 1/2 cup

Oil – 1 1/2 tbsp

Mustard seeds – 1/2 tsp

Garlic – 1 1/2 tbsp crushed

Ginger – 1 1/2 tbsp crushed

Onions – 2 medium sliced

Green chillies – 4 slit

Curry leaves – 2 sprigs

Coriander powder – 2 tsp

Meat masala – 2 tsp

Turmeric powder – 1 tsp

Pepper powder – 1 tsp

Cumin powder – 1/4 tsp

Garam masala- 3/4 tsp

Water – 1/2 cup

Salt – to taste

Thick coconut milk – 1/2 cup


Method

Soak the tamarind in water.  Heat oil in a pressure cooker and splutter mustard seeds.  Add ginger and garlic and fry till the aroma comes out.  Add the onions, green chillies and curry leaves.  Fry till the onions turn light brown.  Add the spice powders, sprinkle some water and fry till the aroma comes out.  Add the pork cubes and salt and fry for 2 minutes.  Now add the tamarind extract, mix well and pressure cook for 20 minutes or till done, on a low flame after the first whistle.  Allow it to cool.  Open the lid and simmer for a minute.  Add the thick coconut milk and mix well.  Switch off the flame before it starts to boil.  Lip-smacking ‘Pork Curry with Coconut Milk’ goes well with rice, rotis, appam, puttu, idiyappam, sannas, dosa, pulao or bread.  Enjoy!
