Tharavu Varattiyathu / Stir Fried Duck

Country duck – 1 kg cut into medium size pieces

Small onions – 1/2 cup sliced

Ginger – 2 tbsp crushed

Garlic – 2 tbsp crushed

Coriander powder – 2 tbsp

Turmeric powder – 1 tsp

Chilly powder – 2 tsp

Vinegar – 4 tsp

Water – 1/2 cup

Salt – to taste

For Frying

Coconut oil – 2 tbsp

Onion – 3 medium sliced

Green chillies – 4 slit

Curry leaves – 2 sprigs

Coconut pieces – 1/2 cup thinly sliced

Pepper powder – 1 tsp

Garam masala – 1 tsp

Fennel powder / Perumjeerakapodi – 1/2 tsp



Pressure cook the duck pieces along with all the mentioned ingredients for 20 minutes or till done.  Heat oil in a non-stick pan and add onions, green chillies, curry leaves and coconut pieces.  Stir fry till the onions turn golden brown.  Add the spice powders and fry till the aroma comes out.  Now add the cooked duck pieces along with the left over gravy, and stir fry till the oil separates.  Lip-smacking ‘Tharavu Varattiyathu / Stri Fried Duck’ is now ready to be served.  It is a very good side dish for rice, appam, puttu, idiyappam, pathiri, porotta, chapathi and pulao.  Enjoy with your loved ones!
