Mixed Vegetable Sabji

Ingredients

Oil – 1 1/2 tbsp

Cumin seeds – 1/2 tsp

Onion – 1 chopped

Green chillies – 4 slit

Curry leaves –  1 sprig

Ginger-garlic paste – 2 tsp

Turmeric powder – 1/4 tsp

Pepper powder – 1/2 tsp

Mutton masala / Curry powder – 1 tsp

Water – 1 cup

Sweet potatoes – 1 cup diced

Green beans – 1 cup diced

Carrots – 1 cup diced

Cauliflower florets – 1 cup

Maggi veg / chicken cube – 1 big crushed

Salt – to taste

Method

Heat oil in a non-stick pan and splutter cumin seeds.  Fry onions, green chillies and curry leaves till the onions turn light brown in color.  Add the ginger-garlic paste and fry for a minute.  Add the spice powders and fry.  Add the sweet potatoes and a cup of water.  Cook covered till they become half done.  Now add the green beans, carrots, cauliflower florets, maggi cube and salt.  Cook covered till done.  Open the lid and stir fry till all the excess water is evaporated.  Yummy ‘Mixed Vegetable Sabji’ goes well with chapathi, nan, kulcha and rice.  Cheers!
