Ingredients
Chicken – 500 gm cut into small pieces
Coriander powder – 1 1/2 tsp
Chicken masala – 1 1/2 tsp
Turmeric powder – 1/4 tsp
Chilly powder – 1 tsp
Cumin powder – 1/4 tsp
Garam masala – 1/4 tsp
Salt – to taste
For Frying
Oil – 2 tbsp
Cinnamon – 1″ piece
Cardamom – 1
Star anise – 1 small piece
Cloves – 2
Curry leaves – 2 sprigs
Dry red chillies – 4 broken
Ginger – 1 tbsp crushed
Garlic – 1 tbsp crushed
Onion – 2 medium chopped
Tomato – 1 big chopped
Water – 1 tbsp
Method
Marinate the chicken along with the spice powders and salt, for 30 minutes. Heat oil in a non-stick pan and add the whole spices and then curry leaves and chillies. Add ginger and garlic, and fry till the aroma comes out. Add onions and fry till they turn light brown. Add the tomato and fry for a minute. Now add the marinated chicken pieces and water. Cook covered till the chicken is done. Open the lid and fry on high flame for 5 minutes. Lip-smacking ‘Chicken Varuval’ is ready to be served! This can be served as a side dish for rice, chapati, porotta, nan, appam, dosa and bread. Cheers!
