Idiyappam / String Hoppers



Fine rice flour / idiyappam podi – 1 1/2 cups

Salt – to taste

Boiling water – 1 1/2 cups or more

Grated coconut – 1/4 cup



Mix rice flour with the salt.  Boil water and add it part by part to the flour and mix with a spoon, till you get a soft dough.  Grease the idiyappam mould and the steaming pan with some oil.  Take a portion of the dough and fill the mould.  Squeeze it onto the pan in circular motion.  Place some grated coconut on top and again squeeze the dough on top of it.  Repeat the process to make idiyappams.  Steam cook for 15 minutes.  Serve delicious ‘Idiyappam / String Hoppers’ with kadala curry, green peas curry, stew, egg masala, chicken curry or simply serve it with coconut milk and sugar.  Enjoy!
