Ingredients
Boiled Potatoes – 5 medium
Coconut oil – 1 tbsp
Peppercorns – 1/4 tsp
Cardamom – 2
Cinnamon – 1″ piece
Cloves – 3
Ginger – 1″ piece chopped
Onion – 1 sliced
Green chillies – 3 slit
Curry leaves – 1 sprig
Thin coconut milk – 11/2 cup
Salt – to taste
Sugar – 1/2 tsp
Thick coconut milk – 1/2 cup
Method
Remove the skin of the potatoes and mash them into big chunks. Heat oil in a non-stick pan and splutter peppercorns. Add the whole spices, followed by ginger, onions, green chillies and curry leaves. Fry till the onions turn light brown. Add the thin coconut milk, potatoes, sugar and salt. Simmer for 5 minutes and then add the thick coconut milk. Mix well and switch off the flame before it starts to boil. Serve yummy ‘Potato Stew’ as a side dish for ‘Onam Sadya’. It goes well with appam, idiyappam and bread as well. Cheers!
