Ingredients
Mushroom – 200 gm chopped
Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Urad dal / Uzhunnu parippu – 1 tsp
Dry red chillies – 2 broken, seeds removed
Curry leaves – 1 sprig
Onion – 1 medium chopped
Water – 1/2 cup
Salt – to taste
For Grinding
Grated coconut – 1/2 cup
Garlic – 1 small
Cumin seeds – 1/4 tsp
Tamarind – 2 small pieces
Turmeric powder – 1/4 tsp
Chilli powder – 1/2 tsp
Method
Grind the ingredients mentioned above to a coarse paste by adding 2 tbsp of water. Keep it aside. Heat oil in a non-stick pan and splutter mustard seeds. Add urad dal and fry till it becomes light brown in color. Add dry red chillies and curry leaves, followed by the onions. Fry till the onions turn light brown. Now add the mushrooms and the coarsely ground coconut paste. Add salt and sprinkle 1/2 cup of water. Cook covered on a low flame till done. Stir in between. Open the lid and fry for 2 more minutes. Yummy ‘Mushroom Thoran’ is ready to be served. Cheers!
Adding tamarind will make the thoran really tasty. Try it yourself and see the difference!
