Ingredients
Snake gourd – 500gm, cut into small pieces
Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1/4 tsp
Garlic – 2 small crushed
Small onions – 5 sliced
Green chillies – 2 slit
Dry red chillies – 2 broken
Curry leaves – 1 sprig
Turmeric powder – 1/4 tsp
Water – 1/4 cup
Salt – to taste
Grated coconut – 1/2 cup
Method
Heat oil in a non-stick pan, splutter mustard seeds and cumin seeds. Add garlic and fry for a few seconds. Add small onions, green chillies, dry red chllies and curry leaves. When the onions turn light brown, add turmeric powder. Add snake gourd, water and salt. Cook covered till done. Open the lid and evaporate excess water, if any. Add the grated coconut and mix well. Cook covered for a minute. Serve ‘Snake Gourd And Coconut Stir Fry / Padavalanga Thoran’ with rice.
