Ingredients
Bottle gourd / Lauki – 2 cups diced
Water – 1 1/2 cups
Moong dal / Green gram dal – 1/2 cup
Onion – 1 medium chopped
Tomato – 1 chppoed
Green chillies – 3 slit
Garlic – 5 small chopped
Turmeric powder – 1/4 tsp
Salt – to taste
Coriander leaves – 2 tbsp chopped (for garnishing)
For Tempering
Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1/4 tsp
Onion – 1/2 medium chopped
Dry red chillies – 3 broken
Curry leaves – 1 sprig
Method
Pressure cook the bottle gourd along with water for 3 minutes on a low flame, after the first whistle. Allow it to cool. Add the rest of the ingredients and pressure cook for another 4 minutes. Allow it to cool. Add the coriander leaves to the curry and mix well. Add more water if it is too thick. Simmer for a minute and switch off the flame. Heat oil in a small non-stick pan and do the tempering. Pour it over the lauki dal curry and mix well. Serve delicious ‘Bottle Gourd and Moong Dal Curry’ with rice, chappathi, puri or idli. Enjoy!
