Ingredients
Chicken – 500 gm cut into pieces
Ghee – 1 tsp
Oil – 1 tbsp
Cloves – 4
Cardamom – 2
Cinnamon – 2″ piece
Star anise – 1
Fennel seeds – 1/4 tsp
Onion – 2 medium chopped
Ginger-garlic paste – 2 tsp
Dry red chillies – 4 broken
Tomato puree – 3/4 cup
Kashmiri chilly powder – 2 tsp
Pepper power – 1/4 tsp
Cumin powder – 3/4 tsp
Turmeric powder – 1/2 tsp
Water – 3/4 cup
Salt – to taste
Thick coconut milk – 1/4 cup
Coriander leaves – 2 tbsp chopped
Method
Heat 1 tsp of ghee in a non-stick pan and fry the chicken pieces till they turn light brown in color. Keep them aside. Add oil to the same pan and add the whole spices and onions. Fry well and add ginger-garlic paste and dry chillies. Add the tomato puree and spice powders. Fry till the aroma comes out. Add the fried chicken pieces along with the leftover juices, water and salt. Cook covered till done. Add the thick coconut milk and switch off the flame. Garnish with coriander leaves. Yummy ‘Chicke Madras’ goes well with rice, rotis, porotta, dosa, idli, idiyappam and pulao. Enjoy!
