Chicken Rice with Vegetables


Oil – 2 tbsp

Bay leaf – 1 small

Onion – 1 sliced

Ginger – garlic paste – 2 tsp

Green chilly – 1 chopped

Chicken masala / Curry powder – 2 tsp

Chicken – 500 gm cut into pieces

Water – 1 cup

Salt – to taste

Maggi chicken cubes – 2 small crushed

Carrot – 1 chopped

Green beans – 5 chopped

Frozen green peas – 1/2 cup

Basmati rice – 2 cups

Water – 4 cups

Coriander leaves – 1 tbsp chopped (optional)


Soak the rice in water for half an hour.  Heat oil in a pan and add the bay leaf and onions.  When the onions turn pink, add the ginger-garlic paste and green chillies. Then add the chicken masala and fry.  Add the chicken pieces, water and salt.  Cook covered till done.  Add the crushed Maggi cubes and vegetables.  Switch off the flame.  Drain the water and transfer the rice to a rice cooker.  Pour 4 cups of  water.  Add the chicken and vegetable mixture.  Add coriander leaves and cook till done.  Serve tasty ‘Chicken Rice with Vegetables’ along with tomato chutney.  Enjoy!

If you are using a pressure cooker, pour water just 1 inch above the rice, chicken and vegetable mixture.  Cook on a low flame for 4 minutes, after the first whistle.
