Szechuan Chicken

Ingredients

Boneless chicken – 500 gm cut into cubes

Egg – 1

Pepper powder – 1/2 tsp

Corn flour – 1 1/2 tbsp

All purpose flour / Maida – 1 1/2 tbsp

Salt – to taste

Oil –  for frying + 1 1/2 tbsp

Dry red chillies – 4 broken

Onions – 1 cup diced

Green capsicum – 1 cup diced

Celery – 1/2 cup chopped

Ginger-garlic paste – 1 tsp

Szechuan sauce – 4 tsp (store bought)

Soya sauce – 2 tbsp

Tomato sauce – 4 tsp

Sugar – 1/2 tsp

Salt – to taste

Corn flour – 1/2 tbsp

Water – 1/2 cup

Spring onions – 4 tbsp chopped

 

Method

Mix together egg, pepper powder, corn flour, maida and salt in a bowl.  Coat the chicken pieces with this mixture.  Deep  fry them till light brown.  Heat 1 1/2 tbsp of oil in a non-stick pan and add the dry chillies followed by onions, capsicum and celery.  Fry for 2 minutes and add the ginger-garlic paste.  Fry for few seconds and add the sauces, sugar and salt.  Add the fried chicken pieces and mix well.  Add corn flour mixed in water and simmer for a minute.  Finally add the chopped spring onions and mix well.  Serve delicious ‘Szechuan Chicken’ with fried rice or noodles of your choice.  Enjoy with your loved ones !
