Butter Chicken / Murgh Makhani

Ingredients

Boneless chicken – 1/2 kg cut into pieces

For the Marinade

Thick curd – 1/4 cup

Lime juice – 1 1/2 tsp

Ginger-garlic paste – 1 1/2 tsp

Kashmiri chilly powder – 1 1/2 tsp

Tandoori chicken masala – 1 1/2 tsp

Salt – to taste

For the Gravy

Butter – 2 tbsp

Bay leaf – 1

Onion – 1 chopped

Ginger-garlic paste – 1 tsp

Chilly powder – 1 tsp

Tomato puree – 1 1/2 cups

Orange red color – 2 pinches

Salt – to taste

Garam masala – 1/2 tsp

Cashew nuts – 10

Warm water – 1/4 cup

Cream – 1/4 cup

Coriander leaves – 1 tbsp chopped

Method

Marinate the chicken pieces with the above mentioned ingredients for 3 hrs .  Blanch two tomatoes in hot water and remove the skin.  Blend it in a mixer with some water to make the puree.  Bake the chicken in a preheated oven for 30 minutes on 180 degree C.  Soak the cashew nuts in warm water for 15 minutes.  Grind it to make a fine paste.  Melt butter in a non-stick pan and add the bay leaf and onions.  When they turn pink, add ginger-garlic paste and fry for a minute.  Add chilly powder and then tomato puree.  Add salt, orange red color and the baked chicken pieces.  Let it simmer for 5 minutes.  Now add garam masala, cashew paste and cream, and mix well.  Simmer for a minute more and switch off the flame.  Garnish with chopped coriander leaves and cream.  Serve delicious ‘Butter Chicken / Murgh Makhani’ with nan, kulcha, paratha, chapathi or pulao .  Enjoy with your kids!

You can add a tsp of crushed Kasoori Methi/ Dry Fenugreek leaves to enhance the flavor of the ‘Butter Chicken’.
