Stir Fried Green Amaranth With Coconut / Cheera Thoran

Ingredients

Amaranth / Cheera – 1 bunch chopped

Oil – 2 tbsp

Black gram dal / Urad dal – 1 tsp

Dry red chillies – 4 broken

Garlic – 1 tsp crushed

Onion – 1 big chopped

Curry leaves – 1 sprig

Salt – to taste

Grated coconut – 3 tbsp

Method

Heat oil in a large non-stick pan and add urad dal, dry chillies and garlic.  Fry for few seconds and add onions and curry leaves.  Fry till the onions turn light brown.  Add  the amaranth and salt.  Cook covered till done.  Add the grated coconut and mix well.  Stir fry for a minute.  Healthy ‘Stir Fried Green Amaranth With Coconut / Cheera Thoran’ is now ready.  Serve it with steamed rice.  Cheers!
