Thai Cashew Chicken

Ingredients

Boneless chicken – 500 gm julienne

Cashew nuts – 20

Garlic – 5 small ones crushed

Onions – 2 medium julienne

Red capsicum – 1/2 julienne

Yellow capsicum – 1/2 julienne

Green capsicum – 1/2 julienne

Dry red chillies – 5 broken

Pepper powder – 1/4 tsp

Soy sauce – 2 + 2 tbsp

Fish sauce – 2 tbsp

Brown sugar – 2 tbsp

Salt – to taste

Oil – 3 tbsp

Method

Marinate the chicken pieces with 2 tbsp soy sauce, fish sauce and salt. Heat oil in a wok and fry cashew nuts.  Keep aside.  Now add crushed garlic and fry till light brown.  Add the marinated chicken pieces and fry on a high flame till all the juices from the chicken are absorbed and oil separates.  Add onions and fry till they turn pink.  Then add capsicum and dry red chillies.  Fry for a minute and add 2 tbsp more of soy sauce, brown sugar, fried cashew nuts and salt to taste.  Fry for a minute and switch off the flame.  Delicious ‘Thai Cashew Chicken’ can be served with hot steamed rice, fried rice or noodles.  Enjoy!
