Maida Palappam

Ingredients

Maida / All purpose flour – 1 1/2 cups

Thick coconut milk – 1 cup

Water – 1 1/2 cups

Baking soda – 1/4 tsp

Sugar – 1 1/2 tbsp

Egg – 1 beaten

Salt – to taste

Method

Make a smooth batter using all the mentioned ingredients.  Keep it aside for 15 minutes.  Heat an ‘appachatti’ or a small non-stick wok and pour a laddle full of batter.  Rotate the wok once.  Cover with a lid and cook on a medium flame for 2 minutes.  Transfer it to a plate.  Repeat the same process with the rest of the batter.  Super tasty ‘Maida Palappam’ is now ready!  Serve it as a snack or for breakfast.  Enjoy with your kids!
