Garlic – 2 tsp crushed

Green chillies – 5 slit

Onion – 1 chopped

Curry leaves – 2 sprigs

Tomatoes – 2 chopped

Method

Heat oil in a ‘manchatti’ or a non-stick pan and add crushed ginger and garlic.  Add green chillies, onions and curry leaves.  Fry till the onions turn light brown.  Add the tomatoes and salt.  Fry till the oil separates.  Add the spice powders and sprinkle some water.  Fry for 2 minutes.  Add water and vinegar, cover with a lid and allow it to boil.  Add the sardines and cook covered on a low flame for 15 minutes.  Yummy ‘Mathi Thilappichathu / Sardine Curry’ is now ready.  Serve hot with steamed rice.  Cheers!
