Lemon Rice/ Chitranna

Ingredients

Cooked raw rice – 4 cups

Onion – 1 medium chopped

Green chillies – 2 chopped

Ginger – 1 tsp finely minced

Dry red chillies – 6 broken, seeds removed

Curry leaves – 2 sprigs

Turmeric powder – 1 1/4 tsp

Lime juice – 4 to 5 tbsp

Mustard seeds – 1 tsp

Channa dal – 1 tbsp

Urad dal – 1 tbsp

Peanuts – 1/4 cup

Salt – to taste

Oil – 2 tbsp

Method

Heat oil in a large non-stick pan and splutter mustard seeds.  Add peanuts and roast for a minute.  Add channa dal and urad dal.  Stir and add onions, green chillies, ginger, red chillies and curry leaves.  Fry till the onions turn light brown.  Meanwhile, add lime juice and salt to the cooked rice.  Mix well and keep aside.  Add turmeric powder into the pan and stir.  Now add the rice and mix well till the rice gets an even yellow color.  Serve yummy ‘Lemon Rice/ Chitranna’ with pickle and pappads.  Cheers!!!

My mother used to add onions while making ‘Lemon Rice’.  It enhances the taste of the rice.  Try it for once, you will love it…!
