Tom Yum Chicken (Tom Yum Gai) Soup With Vegetables

Ingredients

Chicken stock – 6 cups

Tom Yum paste – 1 tbsp store bought

Button mushroom – 1/2 cup sliced

Cauliflower florets – 1/2 cup

Green Papaya – 1/2 cup diced

Tomato – 1 medium chopped

Carrot – 1 diced

Green chilly – 1 sliced

Ginger – 1″ piece chopped

Lemongrass – 1 stalk

Kaffir lime leaf – 1 shredded

Galangal – 1″ piece

Coriander stem and roots – 2 tbsp crushed

Fish sauce – 2 tsp

Sugar  – 1 tsp

Lime juice – 2 tsp

Salt – to taste

Cooked chicken – 1/2 cup shredded

Cabbage – 1/2 cup shredded

Coriander leaves – 2 tbsp chopped

Method

Add all the ingredients except the cooked chicken, cabbage and coriander leaves, into a stew pot and bring to boil.  Cook covered on a low flame till the veggies are done.  Add the shredded chicken, cabbage and coriander leaves.  Cook for another 5 minutes more.  Lip-smacking ‘Tom Yum Chicken (Tom Yum Gai) Soup With Vegetables’ is now ready.  Serve it hot.  Cheers!
