Kurkuri Bhindi / Crispy Fried Lady’s Finger

Ingredients

Lady’s finger – 250 gm diced

Gram flour / Besan – 1/2 cup

Corn flour – 1 tbsp

Amchur powder / Dried mango powder – 1/2 tsp

Chilly powder – 3/4 tsp

Turmeric powder – 1/2 tsp

Salt – to taste

Water – 4 tsp

Oil – for frying

Green chillies – 4 slit

Curry leaves – 1 sprig

Method

Add all the mentioned ingredients to the diced lady’s finger and mix well.  Keep it aside for 15 minutes.  Heat oil in a pan and fry green chilles and curry leaves.  Drain and keep aside.  Fry the lady’s finger in two batches till they turn golden brown in color.  Stir occasionally while frying.  Garnish yummy ‘Kurkuri Bhindi / Crispy Fried Lady’s Finger’ with fried green chillies and curry leaves.  Serve it hot as a snack or as a side dish with rice or rotis.  Enjoy!
