Kallappam

Ingredients

Fine rice flour/ Appam podi – 2 cups

Coconut milk powder – 1/4 cup

Rice flakes/ Aval – 1 cup

Small onions – 4 small

Garlic – 2 small

Cumin seeds – 1/2 tsp

Dry yeast – 1/2 tsp

Warm water – 1/2 cup

Sugar – 2 tsp

Salt – to taste

Water – as required

Oil – as required

Method

Dissolve yeast and sugar in warm water and keep aside.  Grind rice flakes, small onions, garlic and cumin seeds to a fine paste adding enough water.  Add the paste to the rice powder.  Also add coconut milk powder and the yeast mixture.  Add enough water and make a thick batter of idli/ pancake consistency without forming lumps.  Keep covered in a warm place for 6 to 8 hrs or overnight.  Add salt to taste and stir well.  Heat a non-stick pan/tawa and smear  a little oil on it.  Pour a ladleful of batter on to the pan.  Do not spread the batter.  Cover and cook on a medium flame for 2 minutes.  Flip the appam and cook on the other side too, keeping it covered with a lid.  Serve super tasty ‘Kallappam’ with any stew or veg/ non veg curry of your choice.

You can substitute coconut milk powder with one cup of thick coconut milk or with 1 cup of grated coconut.  But be careful while adding water.  The batter should be of idli consistency.

Rice flakes can be substituted with  3/4 cup of cooked rice.

Rice powder can be replaced with 2 cups of soaked raw rice.

    Can I substitute the coconut milk powder, if yes what and how much do I need to substitute it with? I want to make this for my little one but then am a little scared to use the ones that they sell at the shops..

    I was looking out for this recipe for appam using aval and rice flour for a long time. I used to grind soaked rice and aval when i was in India. Now using rice flour I did not know the quantities to substitute. will try it out.
