Brinjal-Potato Fry

Brinjal-Potato fry is one of my favorite vegetarian dishes.  My children like to eat brinjal, if I fry it this way.  This side dish goes well with rice and chappathis!

Ingredients

Potatoes – 2

Brinjal/Eggplant – 1

Onion – 1 medium

Garlic – 1 chopped

Curry leaves – 1 sprig

Turmeric powder – 1/4 tsp

Chilly flakes – 1 tsp

Salt – to taste

Oil – 1 1/2 tbsp

Method

Peel, wash and cut the potatoes into thin slices.  Keep them immersed in water.  Slice the onions.  Heat oil in a non-stick pan and fry the onions, garlic and curry leaves for a minute.  Add the turmeric powder and chilly flakes and stir.  Now drain the potatoes and add them to the pan.  Add salt and mix well.  Do not add any water while cooking. Cook covered on a slow fire.  Stir in-between.  Meanwhile, slice the brinjal into thick pieces and add them to the pan once the potatoes are half cooked.  Mix well, cover the pan with the lid and continue cooking till done.  Brinjal-Potato fry is ready!
